About temperature scales

Temperature measures the average kinetic energy of particles. Celsius sets 0 at the freezing point of water and 100 at its boiling point (at sea-level pressure). Fahrenheit, still standard in the United States, puts freezing at 32 and boiling at 212. Kelvin is the SI scale and starts at absolute zero (−273.15 °C), the coldest possible temperature, with the same step size as Celsius.

Because these scales have different zero points, temperature conversion is not a simple multiplication — it shifts and scales, which is why doubling the number of degrees does not double the temperature.
